Grilled Vegetables

    Prepare the Vegetables

    Clean the portobello mushrooms and remove the stems. Slice the red onion into thick rings.

    Marinate the Vegetables

    In a bowl, mix the olive oil, salt, and black pepper. Add the portobello mushrooms and red onion rings, ensuring they are coated well. Let them marinate for at least 15 minutes.

    Grill the Vegetables

    Preheat the grill to medium-high heat. Grill the marinated portobello mushrooms for about 5-7 minutes on each side until tender. Grill the red onion rings for about 3-4 minutes per side until they are soft and have grill marks.

Assemble the Sandwich

    Prepare the Rolls

    Slice the Turano rolls in half and toast them lightly on the grill for 1-2 minutes until they are golden.

    Add Cheese and Vegetables

    Place a slice of provolone cheese on the bottom half of each toasted roll. Top with grilled portobello mushrooms, grilled red onion rings, and roasted red peppers.

    Spread Condiments

    Spread 1 tablespoon of pesto on the top half of each roll and 1 tablespoon of garlic aioli on the bottom half.

    Close the sandwich with the top half of the roll. Serve immediately while warm.
