Method
Crust Preparation
- 1
Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture resembles wet sand.
- 2
Form the crust
Press the crumb mixture evenly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to pack it tightly for a sturdy crust.
- 3
Bake the crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow to cool while preparing the filling.
Cheesecake Filling Preparation
- 4
Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.
- 5
Add sugar and sour cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined. Scrape down the sides of the bowl as needed.
- 6
Incorporate eggs and vanilla
Add the vanilla extract and eggs, one at a time, mixing on low speed just until incorporated. Be careful not to overmix.
- 7
Add flour
Gently fold in the all-purpose flour until just combined. The filling should be smooth and creamy.
- 8
Pour filling into crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.
- 9
Bake the cheesecake
Bake in the oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly. The edges should be lightly golden.
Cooling and Serving
- 10
Cool the cheesecake
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
- 11
Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to fully set.
- 12
Serve with drizzle
Remove the sides of the springform pan. Drizzle with chocolate, raspberry, strawberry, or caramel sauce as desired before slicing and serving.
