Method

Cooking Pasta

    Boil Water

    Fill a large pot with water and add salt. Bring to a rolling boil.

    Cook Bucatini

    Add the bucatini pasta to the boiling water and cook according to the package instructions until al dente, usually around 9-11 minutes.

Preparing Sauce

    Mix Cheeses

    While the pasta is cooking, finely grate the Pecorino Romano and Grana Padano cheeses and mix them together in a bowl.

    Prepare Olive Oil and Pepper

    In a large skillet, heat the olive oil over medium heat. Add the freshly cracked black pepper and sauté for about 1 minute until fragrant.

Combining Ingredients

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta cooking water.

    Combine Pasta and Sauce

    Drain the bucatini and immediately add it to the skillet with the olive oil and pepper. Toss to coat the pasta.

    Add Cheese

    Gradually add the cheese mixture to the pasta, tossing continuously. If the sauce is too thick, add a bit of the reserved pasta water to achieve a creamy consistency.

    Serve

    Taste and adjust seasoning with salt if necessary. Serve immediately with extra cheese and black pepper on top.
