Method

Frying Mozzarella

    Prepare the Cheese

    Cut the mozzarella cheese into 1-inch thick slices.

    Set Up Breading Station

    In three separate bowls, place the flour in the first bowl, beat the eggs in the second bowl, and place the breadcrumbs mixed with salt and black pepper in the third bowl.

    Bread the Mozzarella

    Take each mozzarella slice, coat it in flour, dip it in the beaten eggs, and then coat it with breadcrumbs. Ensure each piece is fully covered.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Mozzarella

    Carefully add the breaded mozzarella slices to the hot oil and fry for about 2-3 minutes on each side until they are golden brown. Remove and drain on paper towels.

Assembling the Sandwich

    Prepare the Sauces

    In a small bowl, mix together the Dijon mustard and mayonnaise until well combined.

    Assemble the Sandwich

    Spread the Dijon-mayo mixture on the inside of both brioche buns. Place a slice of provolone cheese on the bottom half of each bun, then add 2-3 pieces of the fried mozzarella on top.

    Finish the Sandwich

    Top with the other half of the brioche bun and serve immediately.
