Preheat the Oven
Preheat your oven to 375°F (190°C) to get it ready for cooking the bacon wrapped dates.

Prepare the Dates
Make a small slit in each date and remove the pit. If you're using chorizo, cut it into small pieces or crumble it. If you're using goat cheese, make small balls of cheese.

Stuff the Dates
Stuff each date with either a piece of chorizo or a ball of goat cheese. Make sure to fill them generously.

Wrap with Bacon
Take one slice of bacon and wrap it around each stuffed date. Secure with a toothpick if necessary.
Cooking

Arrange on Baking Sheet
Place the wrapped dates on a baking sheet lined with parchment paper for easy cleanup.

Bake
Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the bacon is crispy and browned.

Drizzle with Balsamic Glaze (Optional)
Once removed from the oven, drizzle with balsamic glaze if desired for added flavor.

Remove the toothpicks if used, and serve warm as an appetizer or snack.
