Prepare the Potatoes
Peel and grate the Russet potatoes using a box grater. Rinse the grated potatoes in cold water to remove excess starch, then drain and pat dry with paper towels.

Make the French Onion Dip
In a mixing bowl, combine sour cream, mayonnaise, caramelized onions, onion powder, garlic powder, chopped chives, salt, and black pepper. Mix until well combined and refrigerate until serving.

Fry the Potatoes
Heat canola oil in a deep skillet over medium-high heat. Once the oil is hot, take a handful of the grated potatoes and form them into a small patty. Carefully place the potato patty into the oil and fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Oysters
Place the fried potato patties on a serving plate. Top each patty with a fresh oyster. Drizzle with truffle oil and sprinkle with additional chives for garnish.
