Directions for Making King Vineyard Sparkling Chardonnay

    Harvest and Prepare Grapes

    Harvest the Chardonnay grapes and wash them thoroughly. Remove any stems and debris.

    Crush the Grapes

    Crush the grapes in a large vessel to release the juice. You can use a wine press or do this manually.

    Make the Must

    In a large pot, combine the crushed grapes with 4 cups of water and 1 cup of sugar. Stir until the sugar is dissolved.

    Add Yeast and Acid

    Sprinkle the yeast and acid blend into the must and stir gently. Cover the vessel with a clean cloth and let it ferment for 7-10 days at room temperature.

    Siphon and Stabilize

    After fermentation, siphon the liquid off the sediment into a clean vessel. Add potassium metabisulfite to stabilize the wine.

    Bottle the Wine

    Using a funnel, bottle the wine into clean, dry bottles. Add bottling yeast to each bottle before sealing.

    Secondary Fermentation

    Seal the bottles tightly and store them in a cool, dark place for 2-3 weeks to allow secondary fermentation to take place and for the bubbles to form.
