    Mashing

    In a large pot, heat 5 liters of water to about 165°F (74°C). Add the pale malt and caramel malt, stirring well to ensure even saturation. Maintain the temperature around 150°F (65°C) for 60 minutes.

    Lautering

    After mashing, drain the liquid (wort) into a fermentation vessel, leaving the grain behind. Rinse the grains with hot water to extract more sugars.

    Boiling

    Bring the wort to a boil and add the Citra hops. Boil for 60 minutes, adding the Mosaic hops in the final 10 minutes of the boil.

    Cooling

    Cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermenter and add the American Ale yeast. Seal the fermenter and allow it to ferment for 1-2 weeks, or until bubbling stops.

    Bottling

    In a separate container, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap them securely.

    Carbonation

    Allow the bottled beer to carbonate at room temperature for 1-2 weeks before refrigerating.
