    Prepare the Chicken

    Heat olive oil in a large paella pan or a wide skillet over medium heat. Add chicken thighs, season with salt and pepper, and brown on all sides. Remove and set aside.

    Cook the Chorizo

    In the same pan, add sliced chorizo and cook for about 2-3 minutes until they start to release their oils. Remove and set aside with the chicken.

    Sauté Vegetables

    Add chopped onion, garlic, and both bell peppers to the pan. Sauté until softened, about 5 minutes.

    Add Tomatoes and Spices

    Stir in chopped tomatoes, saffron, and paprika. Cook until the tomatoes break down, about 3-4 minutes.

    Add Rice

    Add rice to the pan, stirring well to coat with the tomato mixture. Cook for 1-2 minutes.

    Add Broth and Chicken

    Pour in the chicken broth and bring to a boil. Return the browned chicken and chorizo to the pan. Adjust seasoning with salt and pepper.

    Simmer

    Reduce heat to low, cover the pan, and let simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid. Do not stir during this time.

    Add Peas

    In the last 5 minutes of cooking, sprinkle frozen peas over the paella. Cover again to let them steam.

    Serve

    Once done, remove from heat and let rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
