In a large skillet over medium heat, crumble and cook the pork sausage until browned and cooked through, about 5-7 minutes. Drain excess fat, leaving about 2 tablespoons in the skillet.

Sprinkle the flour over the sausage and vegetable mixture. Stir well to combine and cook for 2-3 minutes, until the flour is lightly browned.

Add Broth and Seasonings
Gradually pour in the chicken broth, stirring constantly to avoid lumps. Add Cajun seasoning, salt, and black pepper. Bring the mixture to a simmer.

Continue to simmer for about 5-10 minutes, stirring occasionally, until the gravy thickens to your desired consistency.
