Prepare the Casings

Soak the natural sausage casings in cold water for at least 30 minutes before using. Rinse thoroughly to remove any excess salt.

Mix the Meat and Spices

In a large mixing bowl, combine the ground turkey, pork fat (if using), salt, black pepper, garlic powder, onion powder, thyme, sage, paprika, and cayenne pepper. Mix well using your hands or a spoon until all ingredients are evenly incorporated.

Stuff the Sausages

Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overstuff. Twist sausages into 6-inch links and tie the ends with kitchen twine.

In a large skillet, heat olive oil over medium heat. Add the sausage links and cook for 10-12 minutes, turning occasionally, until they are browned and cooked through. The internal temperature should reach 165°F (74°C).
