    Prepare the Tofu

    Drain the tofu and press it between paper towels to remove excess moisture. Cut the tofu into 1-inch cubes.

    Cook the Eggplant

    Slice the eggplant into 1-inch cubes. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the eggplant and sauté for about 5 minutes until it starts to soften. Remove from the skillet and set aside.

    Fry the Tofu

    In the same skillet, add 2 tablespoons of vegetable oil and heat over medium-high heat. Add the tofu cubes and fry until golden brown on all sides, about 8-10 minutes. Remove the tofu and set aside.

    Combine Ingredients

    In the skillet, add minced garlic and sauté for 1 minute until fragrant. Return the eggplant to the skillet, add the fried tofu, soy sauce, kaffir lime leaves, and chili flakes. Stir-fry for another 3-4 minutes until everything is well combined and heated through.

    Finish with Basil

    Add the fresh basil leaves and toss gently. Cook for an additional minute.

    Serve hot with a side of rice or alone as a delicious vegan dish.
