Preparation and Cooking

    Prepare the Marinade

    In a bowl, combine chopped fresh coriander, minced garlic, soy sauce, olive oil, ground cumin, ground coriander, salt, and black pepper. Mix well to create a marinade.

    Marinate the Mushrooms

    Place the shiitake mushrooms in the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prepare the Skewers

    Preheat your grill or grill pan over medium heat. Thread the marinated mushrooms onto the wooden skewers, 4 mushrooms per skewer.

    Grill the Skewers

    Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the mushrooms are tender and slightly charred.

    Serve

    Remove the skewers from the grill and serve hot with chili vinegar dipping sauce.
