    Prepare the Marinade

    In a bowl, mix the ground coriander, minced garlic, ground cumin, ground turmeric, gluten-free soy sauce, maple syrup, olive oil, salt, and black pepper until well combined.

    Marinate the Mushrooms

    Add the shiitake mushrooms to the marinade and toss gently to coat. Cover and let marinate for at least 30 minutes in the refrigerator.

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill or grill pan over medium heat.

    Skewer the Mushrooms

    Thread the marinated shiitake mushrooms onto the skewers, about 4 pieces per skewer.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the mushrooms are tender and slightly charred.
