Method

Preparation of Skewers

    Marinade Preparation

    In a bowl, combine chopped coriander leaves, minced garlic, soy sauce, olive oil, lime juice, ground cumin, salt, and black pepper. Mix well.

    Marinate Mushrooms

    Add the shiitake mushrooms to the marinade and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

    Skewering

    After marinating, thread the mushrooms onto skewers. Each skewer should hold about 3 mushrooms.

Chili Vinegar Dipping Sauce

    Prepare Dipping Sauce

    In a small bowl, combine rice vinegar, finely chopped chili peppers, sugar, and salt. Stir until sugar is dissolved. Let it sit for 10 minutes to enhance the flavor.

Grilling

    Grill the Skewers

    Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the mushrooms are tender and lightly charred.

Serving

    Serve

    Serve the grilled mushroom skewers hot with the chili vinegar dipping sauce on the side.
