Small Fragrant Duck Recipe
Our house specialty. Succulent fresh duck spiced with cinnamon and star anise. Served with steamed bao buns, sichuan peppercorn salt and sweet plum sauce. (can not be made gluten free)

Prepare the Duck
Preheat your oven to 350°F (175°C). Rinse the duck under cold water and pat it dry with paper towels. Season the inside of the duck with salt and black pepper.

Add Aromatics
Stuff the duck cavity with the garlic cloves, ginger slices, cinnamon sticks, and star anise.

Roast the Duck
Rub the outside of the duck with vegetable oil and sprinkle with additional salt and pepper. Place the duck on a roasting rack in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Rest the Duck
Remove the duck from the oven and allow it to rest for 15 minutes before carving.

Prepare Bao Buns and Sauce
While the duck is resting, steam bao buns according to package instructions and prepare sweet plum sauce for serving.

Serve
Carve the duck and serve it with steamed bao buns, sichuan peppercorn salt, and sweet plum sauce.
