Prepare the Sea Bass
Season the sea bass fillets with salt and pepper. Heat a grill or non-stick pan over medium heat and cook the fillets for about 4-5 minutes on each side until cooked through and flaky. Remove from heat and let cool.

Prepare the Filling
Once the sea bass is cool, flake the fish into bite-sized pieces. In a bowl, combine the flaked sea bass, diced jicama, chopped roasted peanuts, Thai basil leaves, lime juice, chopped chili, and tamarind paste. Mix well to combine.

Assemble the Lettuce Cups
Take a butter lettuce leaf and spoon a generous amount of the sea bass mixture into the center. Fold the sides of the leaf over the filling and serve.

Serve the lettuce cups immediately with extra lime wedges and chili on the side if desired.
