Prepare the Vegetables
Chop the eggplant, bell pepper, green beans, cabbage, and okra into bite-sized pieces.

Prepare the Aromatics
Smash the lemongrass and galangal, and set them aside.

Cook the Curry
In a large pot, heat a little oil over medium heat. Add the lemongrass and galangal and sauté for a minute until fragrant.

Add Coconut Milk and Broth
Pour in the coconut milk and vegetable broth. Stir in the turmeric powder, kaffir lime leaves, salt, and black pepper. Bring to a boil.

Add Vegetables and Tofu
Once boiling, add all the chopped vegetables and tofu puffs. Reduce heat and let simmer for about 15-20 minutes, or until the vegetables are tender.

Adjust Seasoning
Taste the curry and adjust with more salt and pepper if needed.

Serve
Serve hot with pandan turmeric rice cake on the side.
