    Prepare the Ingredients

    Start by cutting the tofu into cubes, slicing the eggplant, bell pepper, and okra, and cutting the cabbage into strips. Mince the shallots and garlic, and slice the chili peppers.

    Fry the Tofu

    In a large pot, heat the cooking oil over medium heat. Add the tofu cubes and fry until golden brown. Remove and set aside.

    Sauté Aromatics

    In the same pot, add the minced shallots, garlic, and chili peppers. Sauté until fragrant and the shallots are translucent.

    Add Vegetables

    Add the eggplant, bell pepper, green beans, okra, and cabbage to the pot. Stir well to combine.

    Add Liquids and Spices

    Pour in the coconut milk and vegetable broth. Add turmeric powder, salt, and black pepper. Toss in the lime leaves. Bring to a boil.

    Simmer

    Reduce heat to low and let the mixture simmer for about 15-20 minutes, or until the vegetables are tender.

    Combine with Tofu

    Add the fried tofu back into the pot. Stir gently to combine and let it cook for another 5 minutes.

    Serve

    Serve the Sayur Lodeh hot with turmeric rice cake on the side.
