    Prep the Ingredients

    Cut the pork shoulder and belly into large chunks. Chop the onion and set aside. Prepare the ginger by peeling and slicing it thinly.

    Sauté Aromatics

    In a large pot, heat some oil over medium heat. Add the chopped onion and ginger, and sauté until the onion becomes translucent.

    Add Pork

    Add the pork shoulder and belly to the pot, browning them on all sides.

    Season with Spices

    Stir in the pickled garlic, mace, cinnamon stick, and cardamom pods. Cook for a few minutes until fragrant.

    Add Liquid

    Pour in the soy sauce and water, adding salt and black pepper to taste. Bring to a simmer.

    Slow Cook

    Cover the pot and reduce the heat to low. Let it simmer for about 2-3 hours, or until the pork is tender and easily shredded.

    Serve

    Remove the cinnamon stick and cardamom pods. Shred the pork with two forks and serve hot with rice or bread.
