Marinade and Toppings

Method

Preparation and Cooking

  1. 1

    Marinate the Lamb Chops

In a large bowl, combine the brandy, Sichuan peppercorns, salt, and black pepper. Add the lamb chops and ensure they are well coated in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Grill

Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.

  3. 3

    Grill the Lamb Chops

Remove the lamb chops from the marinade and let any excess marinade drip off. Place them on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

  4. 4

    Add the Finishing Touches

Once cooked, remove the lamb chops from the grill and brush with hoisin sauce. Top with fresh toasted coconut flakes and crushed peanuts.

  5. 5

    Serve

Arrange the grilled lamb chops on a serving platter and serve immediately.
