    Prepare the Marinade

    In a mixing bowl, combine the chopped lemongrass, grated ginger, chopped shallots, minced garlic, soy sauce, brown sugar, turmeric powder, cumin powder, salt, and black pepper. Mix well to form a marinade.

    Marinate the Chicken

    Cut the chicken breast into 1-inch cubes and add to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.

    Prepare the Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. After marinating, thread the chicken pieces onto the skewers, leaving a little space between each piece.

    Cook the Skewers

    Preheat a grill or grill pan over medium-high heat. Lightly brush the skewers with vegetable oil. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

    Serve

    Remove from grill and let rest for a couple of minutes. Serve hot with your choice of dipping sauce or a side of rice.
