    Marinate the Chicken

    In a bowl, combine the soy sauce, lime juice, minced garlic, grated ginger, and chopped cilantro. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare the Peanut Sauce

    In a saucepan, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, chili paste, and minced garlic. Cook over medium heat, stirring until smooth and heated through. Adjust seasoning to taste.

    Cook the Chicken

    Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade. Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown.

    Serve

    Slice the chicken and serve it with the warm peanut sauce drizzled on top. Garnish with additional cilantro if desired.
