    Marinate the Duck

    In a bowl, mix together the salt, black pepper, cinnamon sticks, and star anise. Rub this mixture all over the duck, ensuring the spices get into the cavity as well. Drizzle olive oil over the duck and rub it in. Let it marinate for at least 2 hours, preferably overnight in the refrigerator.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roast the Duck

    Place the marinated duck on a roasting rack in a roasting pan. Roast in the preheated oven for about 1 hour and 30 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).

    Prepare the Bao Buns

    While the duck is roasting, prepare your bao buns according to package instructions or homemade recipe.

    Make Sichuan Peppercorn Salt

    Mix together 1 tsp of ground Sichuan peppercorns with 1 tsp of salt in a small bowl.

    Serve

    Once the duck is done, let it rest for 10 minutes before carving. Serve with steamed bao buns, Sichuan peppercorn salt, and sweet plum sauce.
