    Prepare the Ingredients

    Dice the chicken breast, red and green bell peppers, and onion. Gather the roasted peanuts and dried Thai bird chillies.

    Heat the Wok

    Heat a wok over high heat until it's very hot. Add a tablespoon of oil to the hot wok.

    Cook the Chicken

    Add the diced chicken breast to the wok and stir-fry for about 5-7 minutes until the chicken is cooked through and slightly golden.

    Add Vegetables and Chillies

    Add the diced onion, red and green bell peppers, and dried Thai bird chillies to the wok. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.

    Add Peanuts

    Stir in the roasted peanuts and cook for another minute until heated through.

    Serve

    Remove from heat and serve hot, optionally with steamed rice.
