Prepare the Chicken
Cut the chicken breast into bite-sized pieces. Toss the chicken pieces in cornstarch until they are evenly coated.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Add the coated chicken pieces and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Cook the Vegetables
In the same skillet, add the chopped bell pepper and sauté for 3-4 minutes until slightly softened. Add the pineapple chunks and stir for another 2 minutes.

Make the Sauce
In a small bowl, whisk together 1/4 cup of sugar, 1/4 cup of vinegar, 1/4 cup of ketchup, and 1 tablespoon of soy sauce. Pour the sauce into the skillet with the vegetables and pineapple, bringing it to a boil.

Combine Everything
Add the crispy chicken back into the skillet, tossing everything together until the chicken is evenly coated with the sweet and sour sauce. Cook for an additional 2-3 minutes.
