    Prepare the Noodles

    Cook the rice noodles according to package instructions, then drain and set aside.

    Cook the Protein

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken (or tofu/shrimp) and stir-fry until fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of oil. Crack in the eggs and scramble until fully cooked. Remove and set aside with the protein.

    Combine Ingredients

    Add the cooked rice noodles back into the skillet. Pour in the soy sauce, fish sauce, and sugar. Toss to combine and heat through.

    Add Peanuts and Green Onions

    Stir in the chopped peanuts and green onions. Mix well.

    Finish and Serve

    Add the cooked protein and scrambled eggs back into the skillet. Squeeze lime juice on top and serve immediately.
