Island Crumbed Scallop Recipe

Prepare the Scallops
Rinse and pat dry the scallops. Season with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place flour, beaten eggs, and breadcrumbs.

Bread the Scallops
Coat each scallop in flour, dip into the egg, and then coat with breadcrumbs.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 180°C (350°F).

Fry the Scallops
Fry the breaded scallops in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Make the Dipping Sauce
In a bowl, combine mayonnaise, roasted curry leaves, cracked black pepper, and lemon juice. Mix well.

Prepare the Salad
Thinly slice the green cabbage and red radish. Toss together in a bowl.

Plate the fried scallops with the dipping sauce and side salad.
