Prepare the Chicken
In a large bowl, season the chicken thighs with salt, black pepper, and half of the garam masala. Let it marinate for at least 30 minutes.

Cook the Onions and Spices
In a large skillet over medium heat, melt the butter. Add the chopped onions and cook until translucent, about 5 minutes. Stir in garlic, ginger, and the remaining garam masala, cumin, coriander, and turmeric. Cook for an additional 2 minutes until fragrant.

Add the Chicken
Add the marinated chicken thighs to the skillet and cook until browned on all sides, about 8-10 minutes.

Make the Sauce
Pour in the pureed heirloom tomatoes and stir well. Bring to a simmer, then reduce heat to low and cover. Cook for 20-25 minutes or until the chicken is fully cooked through and tender.

Finish with Cream
Stir in the heavy cream and let it simmer for an additional 5 minutes, adjusting salt and pepper to taste.

Garnish with chopped fresh cilantro and serve hot with rice or gluten-free naan.
