    Prepare the Ingredients

    Gather all the ingredients and prepare the chicken, vegetables, and herbs.

    Cook the Chicken

    In a large pan or wok, heat the vegetable oil over medium heat. Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes.

    Add Curry Paste and Vegetables

    Stir in the green curry paste and cook for another 2-3 minutes until fragrant. Then, add the sliced bell peppers and zucchini, and continue to stir-fry for another 3 minutes.

    Add Coconut Milk and Simmer

    Pour in the coconut milk, and add the torn kaffir lime leaves, sliced galangal, fish sauce, and sugar. Bring to a gentle simmer and let it cook for 10-15 minutes, allowing the flavors to meld.

    Finish with Basil

    Just before serving, stir in the Thai basil leaves and remove from heat. Adjust seasoning with more fish sauce or sugar if needed.

    Serve hot with steamed rice or rice noodles.
