Prepare the Duck
Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt, Sichuan peppercorns, and five spice powder.

Marinate the Duck
In a small bowl, whisk together soy sauce, rice vinegar, and honey. Brush the mixture over the duck breasts and let them marinate for at least 30 minutes.

Second Cooking
Preheat the oven to 375°F (190°C). Place the marinated duck breasts in a baking dish and roast in the oven for 15-20 minutes until cooked to your desired doneness. Let rest for another 5 minutes before slicing.

Prepare the Sichuan Peppercorn Salt
In a small bowl, combine the remaining Sichuan peppercorns and salt. Crush lightly with a mortar and pestle or a spice grinder.

Slice the duck breasts and serve with steamed buns, Sichuan peppercorn salt, and sweet plum sauce on the side.
