Coconut Sago

Pandan Coconut Cream

Prepare the Sago
Rinse the sago pearls under cold water until the water runs clear. In a pot, bring 3 cups of water to a boil. Add the sago pearls and cook on medium heat, stirring occasionally, until they become translucent (about 10-15 minutes).

Rinse and Drain
Once cooked, drain the sago pearls and rinse them under cold water to stop the cooking process. Set aside.

Make Coconut Mixture
In a separate saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat gently, stirring until the sugar is dissolved. Do not boil.

Combine Sago and Coconut Milk
Add the drained sago pearls to the coconut mixture and stir until well combined. Remove from heat and let it cool slightly.

Prepare Pandan Coconut Cream
If using pandan leaves, blend them with a little water and strain to get pandan juice. Mix the pandan juice with a portion of the coconut cream for a vibrant green color.

Serve
Scoop the sago mixture into serving bowls and drizzle with the pandan coconut cream. Serve chilled or at room temperature.
