Melt the Chocolate and Butter
In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt over a double boiler, stirring occasionally until smooth. Remove from heat and let cool slightly.

Whisk the Eggs
In a separate bowl, whisk together the eggs and granulated sugar until pale and frothy. Add the cooled chocolate mixture and vanilla extract, mixing until well combined.

Whip the Cream
In another bowl, whip the heavy cream until soft peaks form. Gently fold one-third of the whipped cream into the chocolate mixture to lighten it, then fold in the remaining whipped cream until just combined.

Chill the Mousse
Spoon the mousse into individual serving dishes or glasses. Cover and refrigerate for at least 2 hours or until set.

Prepare the Whipped Cream Topping
Before serving, whip the remaining heavy cream with powdered sugar until soft peaks form. Top each mousse with a dollop of whipped cream and a dusting of cocoa powder, if desired.
