Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk the Eggs
In another bowl, whisk the large eggs and granulated sugar together until pale and fluffy.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until combined.

Whip the Cream
In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Be careful not to over-whip.

Fold in Cream
Gently fold the whipped cream into the chocolate mixture until no streaks remain.

Chill the Mousse
Divide the mousse into serving cups and refrigerate for at least 2 hours, or until set.

Serve
Top with additional whipped cream before serving, if desired.
