Making the Filling

Prepare the Filling
In a bowl, combine ground chicken, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.
Assembling Potstickers

Fill the Wrappers
Place a wonton wrapper on a clean surface. Add about 1 tablespoon of the chicken filling in the center. Moisten the edges of the wrapper with water, fold it over, and press to seal. Repeat with the remaining wrappers and filling.
Cooking Potstickers

Cook the Potstickers
In a large skillet, heat a tablespoon of oil over medium-high heat. Add the potstickers, flat side down, and cook until they are golden brown, about 2-3 minutes. Add 1/4 cup of water to the skillet, cover, and steam for about 5 minutes or until the chicken is cooked through.
Making the Dipping Sauce

Prepare the Dipping Sauce
In a small bowl, mix together black vinegar, soy sauce, and chili oil. Adjust seasoning to taste if necessary.
