Dice the chicken breast, green beans, and carrots. Chop the scallions and set aside.

In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken and season with salt and pepper. Stir-fry until the chicken is cooked through, about 5-7 minutes. Remove the chicken from the wok and set aside.

In the same wok, add the remaining tablespoon of vegetable oil. Add the diced green beans and carrots, stir-frying for about 3-4 minutes until they are tender but still crisp.

Combine Ingredients
Add the cooked chicken back into the wok along with the cooked rice and soy sauce. Stir everything together and cook for an additional 2-3 minutes, ensuring the rice is heated through.

Finally, add the chopped scallions and give everything a good toss. Adjust seasoning with additional salt and pepper as needed.
