Prepare the Chicken
Poach the chicken breasts in a pot of simmering water for about 15-20 minutes, or until fully cooked. Remove from the pot and let cool, then slice thinly.

Prepare the Vegetables
Thinly slice the green and red cabbage and carrot. Chop the cilantro and mint leaves.

Assemble the Salad
In a large bowl, combine the sliced cabbage, carrot, cilantro, and mint. Toss well to combine.

Top the salad with the sliced poached chicken, crushed peanuts, and fried shallots.

Serve the salad with the Vietnamese dressing drizzled on top or on the side.
