Cut the chicken breast into bite-sized pieces. Season with salt.

Sauté the Aromatics
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

Cook the Chicken
Add the chicken pieces to the skillet, cooking until browned and cooked through, about 8-10 minutes.

Add Tomatoes and Spices
Stir in the diced heirloom tomatoes, cumin powder, coriander powder, turmeric powder, and garam masala. Simmer for about 10 minutes until the tomatoes break down.

Incorporate the Cream
Reduce heat to low and stir in the heavy cream. Cook for an additional 5 minutes, allowing the flavors to meld.

Garnish and Serve
Remove from heat, garnish with chopped cilantro and serve with rice or gluten-free naan.
