    Prepare the Bok Choy

    Rinse the bok choy thoroughly under cold water to remove any dirt. Cut off the base, and then slice the bok choy into halves or quarters lengthwise, depending on their size.

    Heat the Oil

    In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.

    Sauté Garlic and Ginger

    Add the minced garlic and ginger to the hot oil, stirring frequently for about 30 seconds, or until fragrant.

    Add Bok Choy

    Add the sliced bok choy to the skillet. Stir-fry for about 3-5 minutes, or until the leaves are wilted and the stems are tender but still crunchy.

    Season

    Drizzle the soy sauce over the bok choy, and season with salt and black pepper to taste. Stir well to coat the bok choy evenly.

    Serve

    Remove from heat and transfer to a serving dish. Serve warm as a side dish.
