When we say assam we mean irresistibly sour. Prawns are wok-fried in a tamarind sauce with shallots, garlic and turmeric.

Prepare the Ingredients
Gather and prepare all the ingredients. Peel and devein the prawns, slice the shallots, and mince the garlic.

Heat the Oil
In a wok or large skillet, heat the vegetable oil over medium-high heat.

Sauté Shallots and Garlic
Add the sliced shallots and minced garlic to the hot oil. Sauté for about 2-3 minutes until they are fragrant and the shallots are translucent.

Add Turmeric
Stir in the turmeric powder and cook for an additional minute.

Cook the Prawns
Add the prawns to the wok and stir-fry for about 4-5 minutes until they turn pink and are cooked through.

Add Tamarind Paste
Add the tamarind paste, salt, and black pepper. Mix well and cook for another 2 minutes, allowing the sauce to coat the prawns.

Garnish and Serve
Remove from heat, garnish with fresh chopped cilantro, and serve hot with steamed rice or your choice of side.
