    Remove the stems and seeds from the ancho chilies, then chop them into small pieces.

    In a saucepan, combine the chopped ancho chilies, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves. Reduce the heat and let it simmer for about 10 minutes.

    Remove the saucepan from heat and add the cinnamon stick, vanilla bean (split lengthwise), cloves, and nutmeg. Let it steep for at least 30 minutes.
