    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Heat the Oil

    In a deep fryer or a large, heavy pot, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried fries to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Remove and let drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil and sprinkle with salt. Toss to coat evenly.

    Add Cheese and Chives

    Transfer the fries to a serving platter, sprinkle with grated Parmesan cheese and chopped chives.

    Serve

    Serve hot as a delicious side dish or appetizer.
