    Prepare the Filling

    In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.

    Cook the Vegetables

    Add the diced carrots, peas, and potatoes to the skillet. Stir and cook for another 5-7 minutes until the vegetables are tender.

    Make the Sauce

    Sprinkle the flour over the vegetables and stir to combine. Cook for 1-2 minutes, then gradually add the chicken broth and heavy cream, stirring constantly until the mixture thickens.

    Season the Filling

    Add the shredded chicken, salt, pepper, and thyme. Stir until everything is well combined and heated through. Remove from heat.

    Assemble the Pot Pie

    Preheat the oven to 425°F (220°C). Place one pie crust in a pie dish and pour the filling over it. Top with the second pie crust, sealing the edges and cutting slits for steam.

    Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown. Let sit for 10 minutes before serving.
