Praline Chocolate Cookie

Vanilla Gelato

Method

    Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.

    In a bowl, whisk together flour, cocoa powder, and granulated sugar.

    In a separate bowl, cream together the brown sugar, butter, and praline paste until light and fluffy.

    Add eggs and vanilla extract to the butter mixture and mix well. Gradually add the dry ingredients until combined. Fold in chocolate chips.

    Spread the dough into the prepared baking pan and bake for 20-25 minutes. Allow to cool completely before cutting into bars.

Cappuccino Mousse

    Prepare Gelatin

    In a small bowl, combine gelatin with cold water and let it sit for 5 minutes until softened.

    Heat Coffee

    In a saucepan, heat the espresso and sugar until warm. Remove from heat and add the softened gelatin, stirring until dissolved.

    Whip Cream

    In a bowl, whip the heavy cream until soft peaks form. Gradually fold in the coffee mixture and vanilla extract until smooth.

    Chill

    Refrigerate the mousse for at least 1 hour or until set.

Vanilla Gelato

    Prepare Base

    In a saucepan, combine milk, cream, and sugar. Scrape the seeds from the vanilla bean and add to the mixture (or use vanilla extract).

    Heat Mixture

    Heat the mixture over medium heat until sugar is dissolved, then remove from heat.

    Whisk Egg Yolks

    In a bowl, whisk the egg yolks until pale. Gradually add the warm milk mixture to the yolks, whisking constantly.

    Cook Custard

    Return the mixture to the saucepan and cook over low heat until it thickens, about 5 minutes.

    Chill and Freeze

    Cool the custard completely, then churn in an ice cream maker according to manufacturer's instructions.
