Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash and halve the fingerling potatoes, then toss them in 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

Sear the Filet Mignon
Pat the filet mignon dry with paper towels and season with salt and pepper. In a separate pan, heat 1 tablespoon of olive oil over high heat and sear the filets for 3-4 minutes on each side for medium-rare. Remove from the heat and let rest.

Blanch the Asparagus
In a pot of boiling salted water, blanch the asparagus for about 2-3 minutes until bright green and tender-crisp. Drain and place in ice water to stop cooking.
