    Cook the Pappardelle

    In a large pot of boiling salted water, cook the spinach pappardelle according to package instructions until al dente. Drain and set aside.

    Prepare the Tomatoes

    In a skillet, heat olive oil over medium heat. Add the halved cherry tomatoes and cook until they start to soften and melt, about 5-7 minutes.

    Combine Ingredients

    Add the shredded roasted chicken to the skillet with the tomatoes and stir to combine. Season with salt and black pepper to taste.

    Mix with Pappardelle

    Add the cooked spinach pappardelle to the skillet and toss gently to combine all the ingredients. If needed, add a splash of pasta water to loosen the mixture.

    Serve

    Plate the pappardelle and top with toasted pine nuts and a generous sprinkle of grated Grana Padano. Serve immediately.
