    Prepare the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and cook until they are browned and tender, about 5-7 minutes. Season with salt and black pepper. Remove from heat and set aside.

    Caramelize the Onions

    In the same skillet, add another tablespoon of olive oil. Add the sliced onion and cook over low heat until they are caramelized, stirring occasionally, about 15-20 minutes. Remove from heat.

    Prepare the Patties

    In a bowl, combine the ground beef, fresh thyme, salt, and black pepper. Mix until just combined. Form the mixture into 4 equal patties.

    Grill the Burgers

    Preheat the grill to medium-high heat. Grill the beef patties for about 4-5 minutes on each side for medium doneness. During the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

    Assemble the Burgers

    Toast the burger buns on the grill for about 1 minute. On the bottom half of each bun, spread a generous amount of aioli, then add the grilled burger patty with melted Swiss cheese, followed by the sautéed wild mushrooms and caramelized onions. Top with the other half of the bun.

    Serve

    Serve immediately while hot with your choice of sides.
