Crispy Brussels Sprouts & Bacon

Method

Preparation

  1. 1

    Prepare the Brussels Sprouts

Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half. Place them in a large bowl.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let it cool on paper towels. Reserve some of the bacon fat.

  3. 3

    Season the Sprouts

In the bowl with Brussels sprouts, add olive oil, salt, pepper, and Aleppo chili flakes. Toss until well coated.

  4. 4

    Roast the Sprouts

Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown.

  5. 5

    Prepare the Glaze

In a small bowl, mix honey and truffle oil until combined. Drizzle this mixture over the roasted Brussels sprouts and toss to coat.

  6. 6

    Make the Parmesan Gremolata

In a separate bowl, combine grated Parmesan cheese, chopped parsley, and lemon zest. Mix well.

  7. 7

    Combine and Serve

Crumble the cooked bacon over the roasted Brussels sprouts and sprinkle with the Parmesan gremolata. Serve immediately.
