Bolognese Preparation

    Cook the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion, carrot, and celery. Cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute.

    Brown the Meat

    Add ground beef and ground pork to the skillet. Cook until browned, breaking it up with a wooden spoon, about 8-10 minutes.

    Add Wine and Tomatoes

    Pour in red wine, scraping up any browned bits from the bottom. Let simmer for 2-3 minutes until slightly reduced. Add crushed tomatoes, salt, black pepper, oregano, and basil.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally. Adjust seasoning to taste.

    Cook the Garganelli

    While the sauce simmers, cook the garganelli pasta in salted boiling water according to package instructions until al dente. Drain and set aside.

    Combine and Serve

    Toss the cooked pasta with the Bolognese sauce. Serve with whipped ricotta on top and garlic ciabatta on the side.
