Method

Preparation Directions

  1. 1

    Prepare the Crust

Preheat your oven to 325°F (160°C). In a medium bowl, mix together 1 1/2 cups of crushed graham crackers, 1/2 cup of melted butter, and 1/4 cup of sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and set aside to cool.

  2. 2

    Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and continue to beat until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs, one at a time, mixing on low speed until just combined. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted. Allow to cool slightly, then fold into the cheesecake mixture.

  3. 3

    Combine with Raspberry Puree

Gently swirl the raspberry puree into the cheesecake filling. Be careful not to overmix; you want a marbled effect.

  4. 4

    Bake the Cheesecake

Pour the cheesecake filling into the prepared crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

  5. 5

    Chill and Serve

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight. When ready to serve, carefully remove the sides of the springform pan and slice the cheesecake. Enjoy!
